Trick or TREAT: easy peasy cupcakes for any occasion!

BOO! Scared you, didn’t I? Probably not. But here is something truly frightening: Ya girl was back in the kitchen this past weekend (with a little help from my mom, of course!) This time, I was whipping up one of my all time favorite desserts with a little bit of Halloween flare: cupcakes baked in ice cream cones! Not only are they super tasty, but they’re ridiculously easy to make and are perfect for all occasions.

Those of you who have known me for years know that this is my mom’s dessert trick! She’s literally been baking these babies since I was in Pre-K 3, and they were always my go-to class treat. I decided to follow in her footsteps with this recipe for our little Halloween get together tonight! I literally spent SO much time at work (hi, bosses, hope you’re not reading this!) looking for the perfect spooktacular treat to make, but I started to get so overwhelmed with all of the different ideas from Popsugar and Tasty. Not to mention the fact that having to buy tons of ingredients is expensive and elaborate dessert concoctions can be so grueling. So, to keep things simple, yet still cute, I decided to raise this recipe from the dead! (Final Halloween pun, I promise.) To add a festive spin, I used food coloring to make the icing orange and yellow like candy corn! All you’ll need is:

-1 box of the cake or cupcake mix of your choice (I went with Devil’s food cake!)

-1 box of Nabisco Comet Cones (or any other wafer cone of your liking)

-1 tub of vanilla icing

-1carton of red food coloring

-1 carton of yellow food coloring

-A smile

The lowdown:

1. Mix the batter according to the directions on the box

2. Lick the spoon. IMPORTANT: do not forget this step.

3. Place the empty cones onto the cupcake pan

4. Pour the batter into each of the cones, leaving about an inch of space between the batter and the rim of the cone

5. Bake, bake, bake!

6. While baking, scoop 1/3 of the tub of icing into a small bowl. Mix in a few drops of the yellow food dye. I used about 5 drops.

7. In a separate bowl, mix another 1/3 of the vanilla icing with about 5 drops of red food dye and 5 drops of yellow food dye to make orange icing. You may have to adjust the number of drops to deepen the color. I continued to go back and forth with the red and yellow until i found a nice shade of orange. Leave the last third of the icing white!

8. Once the cupcakes have finished baking, let them cool for about 10 minutes, then ice away! Rotating between orange, yellow, and white.

9. Take lots of pictures and get ready to impress your friends with the easiest dessert trick in the book.
